Sensory Qualities


When cutting the cheese, you will appreciate its small, unevenly distributed eyes, which add a delicious texture.


Cerrato Old offers a very balanced flavour with good harmony between acidity and sweetness.


Its aromatic profile is predominantly animal, due to the blend of sheep’s and cow’s milk. Certain dairy and toasted nuances can also be detected.


A fairly high firmness to the cut.


Serving Suggestions

Consume at an optimal temperature of 16ºC, open at least 20 minutes before consumption and leaving it at room temperature to enjoy all its aroma and flavour.

Cubes of approximately 2 cm and wedges of approximately 5 mm.
