Portillo Semi-Cured is made from pasteurised cow’s and sheep’s milk, cured for more than 35 days. A cheese with a mild and delicate flavour.

The best accompaniments for Portillo Semi-Cured are anchovies or salmon, corn breads, almonds, hazelnuts or peanuts and honey.

Sensory Qualities


The interior of Portillo Semi-Cured is firm and compact, with an intense white, almost ivory-coloured paste, the result of the delicate blend of milks (cow’s and sheep’s milk).


It has notable sweet and dairy nuances, typical of the maturation process and the origin of the raw material. A mild and balanced flavour, perfect for children or snacks.

A mild, creamy product that is pleasant to chew, facilitating digestion thanks to its fresh body and lightness.


Serving Suggestions

Consume at an optimal temperature of 16ºC, open at least 20 minutes before consumption and leaving it at room temperature to enjoy all its aroma and flavour.

Recommended Cut

Cubes of approximately 2 cm and wedges of approximately 5 mm.
